Easy Recipe for Eggs in a Pepper Ring

It’s tomato season! And green pepper season! Some of us have so many of them around that we’ve got to figure out how to eat them all day long! Here’s an idea for breakfast or for a snack.

Eggs in a Pepper Ring Recipe:

My inspiration for this creation came from someone who posted the picture from this page on Facebook. I looked at the picture and instantly knew what to do! They have some great ideas on different combinations, but I thought you all would like to see my combo.

So here it is… my Fried Egg in a Green Pepper Ring:

You can see, it’s not perfectly inside the green pepper, but guess what?! It still tasted great! Here’s how you can make your own:

1. Cut pepper into thick rings.

So far so good! If you like your pepper crunchy, then slice it thicker. If you like it soft, then slice it thin. You do need it thick enough to hold in the egg. However, my eggs were seeping out underneath anyway, so whatever you like will probably work fine!

2. Heat oil in pan, place peppers in and crack egg into peppers.

This is when you start to feel like you are some kind of fancy cook! Note that the eggs often seep out under the peppers. That wasn’t a problem for me, but I have read that you can try to push the peppers down with a spatula to keep the egg in until it firms up a little bit. Also – if you want to put something like basil or tomato inside the ring before breaking the egg, that might help. However, I did it the other way around!

3. Place sliced tomato on top of egg.

I love tomato with my eggs. Especially right now when tomatoes are really fresh! I like to slice them really thin, so I may even have 2 slices in this picture.

4. Flip! Top with cheese, fresh ground pepper and fresh dill.

That’s all there is to it! While the dish is cooking, I actually eat the rest of the pepper and the rest of the tomato. Yum!
