Nutty Chewy Coco-lass Cookie Recipe

- 1 3/4 cup whole wheat pastry flour (can use all purpose flour)
- 1 3/4 cup old fashioned rolled oats
- 1 t baking soda
- 1 t baking powder
- 1 t salt
- 3/4 cup sugar
- 1/4 cup coconut
- 1/2 cup coconut oil
- 1/4 cup ground flaxseeds
- 1/4 cup molasses
- 2 eggs (beaten)
- 2 t vanilla
- 1/2 cup chopped walnuts (if desired)
- Preheat oven to 350ºF. Mix flour, oats, baking soda, baking powder and salt together.
- Mix sugar, coconut, coconut oil, ground flaxseeds together in a separate bowl.
- Add molasses, eggs and vanilla to the sugar/coconut mixture.
- Add dry ingredients to wet ingredients, small amounts at a time, until all are mixed together.
- Add walnuts, if desired
- Scoop cookies out with a spoon, place on baking tray and bake for 13-15 minutes
