Nutty Chewy Coco-lass Cookie Recipe

Ingredients

  • 1 3/4 cup whole wheat pastry flour (can use all purpose flour)
  • 1 3/4 cup old fashioned rolled oats
  • 1 t baking soda
  • 1 t baking powder
  • 1 t salt
  • 3/4 cup sugar
  • 1/4 cup coconut
  • 1/2 cup coconut oil
  • 1/4 cup ground flaxseeds
  • 1/4 cup molasses
  • 2 eggs (beaten)
  • 2 t vanilla
  • 1/2 cup chopped walnuts (if desired)

Instructions

  1. Preheat oven to 350ºF. Mix flour, oats, baking soda, baking powder and salt together.
  2. Mix sugar, coconut, coconut oil, ground flaxseeds together in a separate bowl.
  3. Add molasses, eggs and vanilla to the sugar/coconut mixture.
  4. Add dry ingredients to wet ingredients, small amounts at a time, until all are mixed together.
  5. Add walnuts, if desired
  6. Scoop cookies out with a spoon, place on baking tray and bake for 13-15 minutes
