1 3/4 cup
whole wheat pastry flour (can use all purpose flour)
1 3/4 cup
old fashioned rolled oats
1
t baking soda
1
t baking powder
1
t salt
3/4 cup
sugar
1/4 cup
coconut
1/2 cup
coconut oil
1/4 cup
ground flaxseeds
1/4 cup
molasses
2
eggs (beaten)
2
t vanilla
1/2 cup
chopped walnuts (if desired)

Instructions
Preheat oven to 350ºF. Mix flour, oats, baking soda, baking powder and salt together.
Mix sugar, coconut, coconut oil, ground flaxseeds together in a separate bowl.
Add molasses, eggs and vanilla to the sugar/coconut mixture.
Add dry ingredients to wet ingredients, small amounts at a time, until all are mixed together.
Add walnuts, if desired
Scoop cookies out with a spoon, place on baking tray and bake for 13-15 minutes
