Quinoa Tabbouleh from Dietitian April Rozzo

Enjoy this delicious recipe that includes lots of health promoting plant chemicals.

Ingredients

  • 2 cups water
  • 1 cup quinoa
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 3 tomatoes (diced)
  • 1 cucumber (diced)
  • 1 bunch green onions (diced)
  • 1 cup spinach (roughly chopped)
  • 1/4 cup fresh mint (chopped)
  • salt and pepper (to taste)

Instructions

  1. Rinse quinoa in a sieve under running water.
  2. Place quinoa and water in a 1 1/2 quart saucepan and bring to a boil. Reduce to a simmer, cover and cook until all the water is absorbed (10-15 minutes).
  3. Fluff with a fork and allow to cool to room temperature.
  4. While quinoa cooks, combine all other ingredients.
  5. Add quinoa to mix and toss with a fork.
