Ingredients

2 cups water
1 cup quinoa
1/4 cup olive oil
1/4 cup lemon juice
3 tomatoes (diced)
1 cucumber (diced)
1 bunch green onions (diced)
1 cup spinach (roughly chopped)
1/4 cup fresh mint (chopped)
salt and pepper (to taste)
Instructions
Rinse quinoa in a sieve under running water.
Place quinoa and water in a 1 1/2 quart saucepan and bring to a boil. Reduce to a simmer, cover and cook until all the water is absorbed (10-15 minutes).
Fluff with a fork and allow to cool to room temperature.
While quinoa cooks, combine all other ingredients.
