
Raw Broccoli Salad

Ingredients

- 1 crown of broccoli (cut into bite size pieces + sliced stems)
- ¼ cup plain yogurt
- 1 TB apple cider vinegar
- 1 small red onion (thinly sliced*)
- 1 cup shredded carrots
- ½ cup sunflower seeds
- ½ cup dried fruit (raisins, apricots, craisins)
- ½ tsp (kosher salt)
- ¼ tsp. pepper
Instructions
- Place all ingredients into a large bowl and stir to combine.
*To remove the strong onion taste, soak the sliced onions in cold water for 10 min. Before adding to the salad mixture
