Raw Broccoli Salad

Ingredients

Units Scale
  • 1 crown of broccoli (cut into bite size pieces + sliced stems)
  • 1/4 cup plain yogurt
  • 1 TB apple cider vinegar
  • 1 small red onion (thinly sliced*)
  • 1 cup shredded carrots
  • 1/2 cup sunflower seeds
  • 1/2 cup dried fruit (raisins, apricots, craisins)
  • 1/2 tsp (kosher salt)
  • 1/4 tsp. pepper

Instructions

  1. Place all ingredients into a large bowl and stir to combine.

*To remove the strong onion taste, soak the sliced onions in cold water for 10 min. Before adding to the salad mixture
