
Grilled Apple and Kale Salad
Ingredients

Grilled apples
- 4 apples (thinly sliced with a knife or mandolin)
- 1 TB fresh rosemary (coarsely chopped)
- Kosher salt and pepper (to taste)
- 2 tsp olive oil
Balsamic vinaigrette
- 2 cloves fresh garlic
- Sprig of rosemary (destemmed)
- 3/4 cup canola oil
- 1/4 cup balsamic vinegar
- Kosher salt and pepper (to taste)
Salad ingredients
- 4–5 cups chopped kale
- ½ cup blue cheese crumbles
- 1 cup walnuts
Instructions
- Mix apples, rosemary, olive oil, salt, and pepper in a bowl. Place on griddle or saute pan (medium heat) and cook until apples are tender and set aside.
- Meanwhile, make the vinaigrette. Place garlic, rosemary, canola oil, balsamic vinegar, salt, and pepper in blender. Blend for 1 minute until ingredients are combined. Set aside.
- Place chopped kale in a large bowl and add grilled apples, blue cheese crumbles, and walnuts. Toss to combine.
- Dress salad with balsamic vinaigrette to your liking and serve.
