Nutrition + Cooking Workshop Recipes!

February 7, 2017 By Julie Lanford MPH, RD, CSO, LDN

I finally pulled all the recipes together for you. We had our most recent Nutrition + Cooking Workshop for cancer survivors on Saturday, Jan 21st. Chef Malena made a trip back from DC (she relocated in November) for our class, which I was VERY grateful for. I love her approach to food and cooking, and participants always LOVE the recipes.

The goals of our program were to:

  • increase knowledge about nourishing food choices for treatment and beyond
  • lower your intimidation around cooking
  • learn cooking techniques you can apply to other foods/recipes
  • be introduced to new foods
  • Don’t Worry, Be Happy, Have FUN!!

And I always start the workshop with “The Cancer Dietitian Nutrition Philosophy,” which you can see here:

We had some nutrition questions throughout the workshop, like these:

  • Does sugar feed cancer?
  • Are artificial sweeteners bad?
  • Should I eat all organic?
  • etc etc etc.

But most of the time we were fed, entertained and educated by Chef Malena! The recipes are always very approachable, nourishing and delicious. You will have to try them yourselves!

Without further ado… here are the links to all the recipes!

Banana Coconut French Toast With Fruit Compote

Creamy Tomato Soup

One-pot Spinach Dal

Broccoli Apple Salad

Overnight Oatmeal

Chocolate Pudding with Tofu

I would love to hear your experience with the recipes, so please let me know how you like them!

–  Julie

PS. Are you a dietitian or patient educator who would like these recipes for printing purposes? Send me an email to julie@cancerservicesonline.org and I can get you pdf versions of the recipes that you can print on cardstock (4 per page).
