Chia Seed Pudding Recipe

Check out this great recipe for chia seed pudding by my sister and fellow Registered Dietitian, Jessica. So easy and delicious!

Chia Seed Pudding Recipe

Chia seeds are a unique and healthy food that can often leave you thinking “what do I do with this?” –  a great way to eat them is using them to make a pudding! Chia seeds contain lots of fiber and healthy fats.

  • Author: Jessica Beardsley, MS, RD, LDN
  • Prep Time: 10 minutes
  • Total Time: 3 hours 10 minutes

Ingredients

Scale
  • 1/2 cup Chia Seeds
  • 1 1/2 cup soy milk
  • 1/4 tsp salt
  • 1–3 tbsp Maple Syrup (personal preference for sweetness)
  • 1 tsp vanilla

Instructions

  1. Pour chia seeds into a large mixing bowl with a lid (seeds will expand)
  2. Add in milk and remaining ingredients
  3. Mix to remove clumps
  4. Put lid on bowl and refrigerate for 1 hour
  5. After 1 hour, remove bowl and stir
  6. Refrigerate for 2 more hours
  7. Enjoy!

Notes

To Change up the flavor:

  • Add cocoa powder or cinnamon
  • Use almond extract instead of vanilla

Pro tip: – Once it has set in the refrigerator for 3 hours, portion it out and keep in the refrigerator for an easy snack!
