Stock the Freezer: Cooking Class Recipes & Recording!

Our January cooking class theme was Stocking the Freezer! We have two new, easy, and tasty recipes featuring items that can stocked in the freezer for easy meals!

In this class, we focused on items that you can stock in the freezer for easy meal planning and preparation. We went over a recipe that can be made from freezer foods as well as a recipe that can be made and frozen for later use.

Here’s what we made:

Enchilada Casserole

This Veggie Casserole is great for a quick and healthy meal! Super easy to prepare and freeze for baking later, or bake cut into smaller portions for freezing! This recipe provides antioxidants, fiber, and protein for a nutrient-rich meal!

Hearty Lentil Stew

This is another amazing quick and healthy meal. This recipe contains lentils which are high in protein and fiber but low in fat, making them a great substitute for meat in meals. Other veggies in this recipe, makes this meal nutrient-dense.

I made one to eat on the day of class, and one of each recipe for my freezer! I’ll thank myself in 2 weeks when I have dinner all ready to go!
