Roasted Vegetable & Black Bean Tacos

Be sure to cook these AMAZING tacos for your next meal or at your next social gathering. Each bite is packed full of flavor and nutrients to help support your overall health!

Note that this recipe also goes along with the DIY taco seasoning recipe and the roasted vegetable seasoning recipe!

Feel free to add your favorite toppings once the tacos are ready to serve!

Roasted Vegetable & Black Bean Tacos

Ingredients

Serves 4
  • 2 cups roasted vegetables with taco seasoning
  • 1 cup cooked or canned black beans, rinsed
  • 4 tsp olive oil
  • 8 corn tortillas
  • avocado, cut into 8 slices
  • 2 limes, cut into wedges
  • chopped fresh cilantro and salsa for garnish

Instructions

1. Heat beans in a saucepan or microwave until reaching desired temperature. Set aside until ready to serve.

2. Preheat a non-stick pan or cast iron skillet over medium heat. Place the tortilla in the pan for about 30 seconds, or until slightly golden. Flip the tortilla over and cook another 30 seconds. The tortillas are ready when they have speckled brown spots on the bottom.

3. Assemble tacos with black beans, roasted vegetables, and avocado. Garnish with lime wedges, cilantro, and/or salsa, if desired.

    These were absolutely delicious! While I prefer plant-based meals, my family and friends also loved them and didn’t miss the meat at all!
