Roasted Vegetable & Black Bean Tacos

Serves 4

  • 2 cups roasted vegetables with taco seasoning
  • 1 cup cooked or canned black beans, rinsed
  • 4 tsp olive oil
  • 8 corn tortillas
  • avocado, cut into 8 slices
  • 2 limes, cut into wedges
  • chopped fresh cilantro and salsa for garnish


1. Heat beans in a saucepan or microwave until reaching desired temperature. Set aside until ready to serve.

2. Preheat a non-stick pan or cast iron skillet over medium heat. Place the tortilla in the pan for about 30 seconds, or until slightly golden. Flip the tortilla over and cook another 30 seconds. The tortillas are ready when they have speckled brown spots on the bottom.

3. Assemble tacos with black beans, roasted vegetables, and avocado. Garnish with lime wedges, cilantro, and/or salsa, if desired.
