Quinoa Tabbouleh

Enjoy this Quinoa Tabbouleh at a special occasion or as your next meal! It is light, refreshing, and bursting with flavor. It is super easy to make, and will have you scraping the bowl clean. This would be perfect for a summer cookout, and can easily be paired with other recipes!

Quinoa Tabbouleh

Ingredients

Units Scale
  • 1 cup quinoa
  • 1/2 tsp salt
  • 2 Tbsp lemon juice
  • 1 garlic clove
  • 1/2 cup olive oil
  • black pepper to taste
  • 1 cucumber
  • 2/3 cup parsley
  • 1/2 cup mint
  • 2 scallions or green onions
 

Instructions

  1. Cook quinoa and 1/2 tsp salt.
  2. Mix lemon juice, chopped garlic, olive oil, salt and pepper to taste.
  3. Chill quinoa. Chop cucumber, tomatoes, scallions and herbs.
  4. Once chill, mix together quinoa, chopped vegetables and dressing.
