Quinoa Tabbouleh

 

Ingredients

Scale
  • 1 cup quinoa
  • 1/2 tsp salt
  • 2 Tbsp lemon juice
  • 1 garlic clove
  • 1/2 cup olive oil
  • black pepper to taste
  • 1 cucumber
  • 2/3 cup parsley
  • 1/2 cup mint
  • 2 scallions or green onions
 

Instructions

  1. Cook quinoa and 1/2 tsp salt.
  2. Mix lemon juice, chopped garlic, olive oil, salt and pepper to taste.
  3. Chill quinoa. Chop cucumber, tomatoes, scallions and herbs.
  4. Once chill, mix together quinoa, chopped vegetables and dressing.
