CranApple Oat Bars

Print Recipe

  • 1 cup unsweetened applesauce
  • 2/3 cup dried cranberries
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground cloves
  • 1 cup oats
  • 1 cup all purpose flour
  • 1/4 tsp salt
  • 3/4 tsp baking soda
  • 1/4 cup brown sugar
  • 1 stick butter, melted
  • 1 tsp vanilla extract
  • Author: Julie Lanford MPH, RD, CSO, LDN

Ingredients

  1. Preheat oven to 350° F. Grease an 8×8 pan and set aside.
  2. In a small bowl, combine applesauce, cranberries, cinnamon, and cloves. Set aside.
  3. In a large bowl combine flour, oats, salt, and baking soda. Then add in brown sugar, melted butter, and vanilla. Stir until incorporated and slightly crumbly.
  4. Add most of this mixture to the baking dish, reserving ~3/4 cup for topping. Press flat into pan and bake for 10 minutes.
  5. Take out of oven and top with applesauce mixture, then crumble remaining oatmeal mixture on top, and bake for another 14-16 minutes until topping is golden brown.
