Q&A: What do you recommend for meals to prep at the beginning of the week to freeze for later?

This question came from a friend of mine. By the time I put my response together, I figured it might be useful to other readers!

Do you have any recommended recipes for meals to prep at the beginning of the week, freeze, and heat when I don’t have time to make dinner or lunch?

Here are the recipes I emailed back to her!

Recipes that can freeze well…

  • Chicken Enchiladas
  • Black bean and butternut squash enchiladas (you can use sweet potato in place of butternut squash)
  • Lasagna
  • Chili – make in crockpot, then freeze in jars or tupperware
  • Curry over rice
  • Breakfast Quiche

Other ideas for preparing ahead of time:

  • and another meal plan: 

And she suggested the following:

Blackened fish tacos with cilantro-lime slaw and avocado/yogurt/cilantro sauce  with a side of cilantro-lime rice (no recipe, just squeeze a lime into the cooked rice and about 1/4 c chopped cilantro). She bought frozen tilapia which is really easy to just heat up on the stove, no thawing necessary – just put it on medium heat with some olive oil for a couple minutes to let it thaw out, and then put the seasoning on it and cooked as the recipe said to. To prep ahead of time, one could chop all the cilantro, make the avocado sauce, the slaw, and the day/time of the meal, you’d only need to cook the fish and heat up the tortillas.

Sounds delicious!!!!

    Unlike butter or vegetable reducing, coconut oil gets TRULY fragile when cold.
