I was so excited to see the stack of boxes on my porch when I arrived home this Monday afternoon. Farmer John veggies are back, hooray!!

I’ve had my farmer, Farmer John of J&S Farm, for about 11 or 12 years now. Technically, I order a 1/2 box and also get a dozen eggs. The boxes come once a week delivered to me. It’s so great!

Needless to say …. Mondays are delicious at our house! Some of the veggies we eat right away. This week my 5 year old and I ate all the sugar snap peas. As I pulled out the strawberries and the mint, I thought…. yum, I really want to eat these together in a lemonade.
So I made the most delicious Minty Strawberry Lemonade (which I am more appropriately terming a “smoothie-ade”). After posting the pic on my social media pages, I had a lot of interest for the recipe. And I’m such a kind and responsive person, that I created a special page just for the recipe!

Sweet Potato Muffins
After that, I wanted something creative to do with some sweet potatoes that were already cooked and in my fridge. I had 2 fresh ones from Farmer John and wanted to use up the already cooked ones before cooking these. So I decided to go for Sweet Potato Muffins and found this recipe, from Good + Simple.

I usually make all kinds of alterations to recipes, adding this, cutting back on that. This recipe was really great as is. I made one small change, which was to mix some flax into the muffins in addition to sprinkling on top. They were as tasty as they look!!
